Dairy-free waffles without milk: crisp, easy and golden

Golden dairy-free waffles topped with berries, banana and maple syrup

Ingredients

  • 1½ cups plain flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1¼ cups unsweetened oat milk or other dairy-free milk
  • ⅓ cup neutral oil
  • 1 teaspoon vanilla
  • Berries, banana and maple syrup, to serve

Method

  1. Heat your waffle maker according to its instructions and lightly oil it if needed.
  2. Whisk flour, sugar, baking powder and salt in a large bowl. Whisk oat milk, oil and vanilla separately, then pour into the dry ingredients.
  3. Stir just until no dry flour remains. A few small lumps are fine; over-mixing makes waffles tough.
  4. Cook portions of batter until crisp and golden. Serve immediately with fruit and maple syrup, or keep warm on a rack in a low oven while you finish the batch.

Best texture tip

For crisp waffles, do not stack them straight from the waffle maker. Rest each one on a wire rack for a minute so steam can escape, then serve warm.
