Dairy-free waffles without milk: crisp, easy and golden

Ingredients
- 1½ cups plain flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1¼ cups unsweetened oat milk or other dairy-free milk
- ⅓ cup neutral oil
- 1 teaspoon vanilla
- Berries, banana and maple syrup, to serve
Method
- Heat your waffle maker according to its instructions and lightly oil it if needed.
- Whisk flour, sugar, baking powder and salt in a large bowl. Whisk oat milk, oil and vanilla separately, then pour into the dry ingredients.
- Stir just until no dry flour remains. A few small lumps are fine; over-mixing makes waffles tough.
- Cook portions of batter until crisp and golden. Serve immediately with fruit and maple syrup, or keep warm on a rack in a low oven while you finish the batch.
Best texture tip
For crisp waffles, do not stack them straight from the waffle maker. Rest each one on a wire rack for a minute so steam can escape, then serve warm.
