Vegan sushi bake: easy, creamy and shareable
A simple baked sushi-style dish with seasoned rice, creamy chickpeas, avocado, cucumber and nori.

Ingredients
- 2 cups cooked short-grain rice
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- 1 cup mashed chickpeas
- 2 tablespoons vegan mayonnaise
- 1 tablespoon sriracha or chilli sauce, optional
- 1 cucumber, diced
- 1 avocado, diced
- 2 nori sheets, cut into strips
- Sesame seeds, spring onion and soy sauce, to serve
Method
- Heat the oven to 200°C (180°C fan). Mix rice with vinegar, sugar and salt, then press into a lightly oiled 20 cm square baking dish.
- Mix chickpeas, vegan mayonnaise and sriracha. Spoon over the rice, leaving a little texture rather than blending smooth.
- Bake for 15 to 18 minutes until hot with lightly golden edges. Cool for five minutes.
- Top with cucumber, avocado, nori, sesame and spring onion. Scoop onto nori sheets or serve in bowls with soy sauce.
Serve it your way
Set out the toppings separately if you are feeding a group. Everyone can scoop a little bake into a nori sheet and add their own avocado, cucumber, chilli or soy sauce.
